Super Easy and Macro Friendly Tilapia Taco!

 

I bought frozen tilapia at Target (Simply Balanced brand) that has GREAT macros! 5g of protein and under a gram of fat per oz ๐Ÿ‘Œ๐Ÿ‘Œ Once I thawed out the filets I marinated them with Frank’s hot sauce and laid them on a nonstick cooking sprayed foil lined pan and sprinkled a generous amount of Mrs. Dash fiesta lime seasoning (because 0 calories ๐Ÿ‘Œ๐Ÿ‘Œ) and bake it at 350 degrees for 15 minutes. The fish comes out sooooo moist and flakey, I pull the filets apart a bit to make taco assembly easier ๐Ÿ‘Œ๐Ÿ‘Œ

 

 

While the fish was baking I cooked on the stove some Knorr Mexican Seasoned Riceย ๐Ÿš super delicious! Took 7 minutes to make and had great flavor ๐Ÿ˜‹ Half a cup of cooked rice was is only 135 calories ๐Ÿ’ช and 23 carbs ๐Ÿ™Œ I opted to use my favorite low carb Tumaro’s Wrap as my taco instead of the flour tortillas my family was using because those wraps fit my macros best because they are lower carb so then I could have more rice and a beer๐Ÿ˜

 

 

Topped my taco with shredded lettuce, pico de gallo, and some guacamole ๐ŸŒถ๐Ÿฅ‘ paired my meal with a corona light ๐Ÿบ (only 99 calories ๐Ÿ‘ I added in alcohol carbs which adds 25g of carbs to my meal)

 

Total macros for this meal: 501 calories with 36P/67C/11F ๐Ÿ‘Œ๐Ÿ‘Œpretty good for a taco and beer night ๐ŸŒฎ๐Ÿบ๐Ÿ˜‹๐Ÿคค

Chicken Street Tacos with Low Carb Spanish Rice

Simple but tasty chicken street tacos with low carb Spanish rice ๐Ÿ™Œ ๐ŸŒฎ๐Ÿš

How is the rice low carb? Because it’s cauliflower rice ๐Ÿ˜‹๐Ÿ‘Œ mixed with diced white onion and tomatoes ๐Ÿ… with some Chile Lime seasoning from Trader Joe’s๐Ÿ”ฅ a cup of my cauliflower Spanish rice is 12g of carbs while a cup of regular Spanish rice is 40g of carbs๐Ÿš So if you’re looking for a lower carb rice option or want more volume for 40g fo carbs then cauliflower rice is the way to go ๐Ÿ‘ I opted for the lower carb rice because I wanted to get in a serving of veggies and my tortillas were higher in carbs (13g each)๐ŸŒฎ and I didn’t want this meal to be too carb heavy as it’s high in fat with avocado๐Ÿฅ‘ and cheese๐Ÿง€

 

But my SUPER soft flour tortillas from Mission were seriously SO delicious and worth every carb๐Ÿ˜‹ I bought my chicken pre-cut and marinated fajitas style from Grocery Outlet from Tysonย ๐Ÿ— kept the rest of my tacos simple and fatty by adding in some jalapeรฑo cheese, fresh avocado, cilantro, and lime juice ๐Ÿ‘Œ

Macro Friendly Italian Dinner ๐Ÿ

Eat better! Not less! Italian style ๐Ÿ˜‹๐Ÿ™Œ๐Ÿ‡ฎ๐Ÿ‡น wow and there’s typo on the photo ๐Ÿคฆ๐Ÿผโ€โ™€๏ธ oh wells….

“Spaghetti” and meatballs ๐Ÿwith a side of bacon and Brussels ๐Ÿฅ“๐Ÿคค๐Ÿ‘ .

I loveee spaghetti squash! SO easy to make just cut it in half, scoop out the seeds, bake, and then scrape out the “spaghetti” with a fork ๐Ÿ‘๐Ÿ™Œ I love how much volume of spaghetti you get for relatively low carbs! Here I have 200g and it’s only 14g of carbs! 200g of regularย  spaghetti pasta would be 145g of carbs๐Ÿ˜… which is fine depending on your carb goals ๐Ÿ˜ƒ

Added mushrooms, red onion, and diced canned tomatoes to my “spaghetti” along with some homemade turkey zucchini meatballs (Recipe below)

To give more volume, carbs, fat, and protein my meal I sautรฉed some bacon and brussel sprouts ๐Ÿ˜œ๐Ÿ™Œ

Lean Ground Turkey-Zucchini-Red Pepper-Green Onion Meatballs

This is FOR SURE the best use of ground turkey I’ve ever done! Who knew lean ground turkey could be SO juicy! The water from the zucchini for sure helps! I want to try this again with extra lean ground turkey and see if that will still keep it juicy. Using the extra lean will bring the fat grams way down ๐Ÿ‘Œ

Ingredients: 1 lb of meat, 3 stalks of green onion, 200g zucchini, and 8 tbsp Red Pepper Eggplant & Garlic Spread from Trader Joe’s

Directions:

  • Grate zucchini and green onion (I used the food processor grate option to made this REALLY simple)
  • Combine meat, zucchini, onion, and spread in a bowl (just use your hands ๐Ÿ˜œ) and form into 20 meatballs
  • Cook meatballs in 400 degree oven for 15 minutes
  • Enjoy ๐Ÿคค

Cheesy Cauliflower Bread

๐Ÿง€Cheesy๐Ÿง€ Cauliflower Bread! Only 87 calories per piece! Such a great way to get people to eat some veggies if they normally don’t…like my family ๐Ÿ˜‚๐Ÿ˜‚

Directions:

Rice with food processor 1 cauliflower head (or buy 640g of riced cauliflower)
Mix rice with 5 eggs, 5 TBSP coconut flour, 1TBSP baking powder, 270g of cheese(I used two different kinds I had available), and onion powder

spray desired pan mold with cookingย  spray/ fill mold to top(this does not rise)/ bake at 375 for 30 minutes/ pull out of oven to cool and enjoy ๐Ÿ˜‹๐Ÿค—๐Ÿ™Œ

Macro Friendly French Toast Sticks

You guys…I can’t even handle this one ๐Ÿคค๐Ÿคคย I seriously loveee French Toast Sticks! I remember being a little girl and getting them from Burger King ๐Ÿ˜ƒ but OH EM GEE those ones are deep fried and not packed with lean protein and healthy fats like these are ๐Ÿ˜๐Ÿ™Œ macros listed are for 11 sticks๐Ÿžand 11 Sticks from BK isย  836 kcal 11P/108C/40F ๐Ÿ˜ณ

Ingredients: ๐Ÿž90g cut white bread (about 5 slices)

๐Ÿฅš80g egg whites

๐Ÿณ2 whole eggs

๐Ÿฅš4g vanilla protein powder

๐Ÿฅ›1 tbsp @drinkorgain protein almond milk

๐Ÿ’ฅDash of cinnamon

๐ŸฅœTopped with 1.5 tbsp of Chocolate pb2 drizzle .

Instructions:

๐ŸŒŸWhisk eggs, egg whites, milk, protein powder, and cinnamon in a bowl
๐ŸŒŸCut bread into stick pieces (extra bread can be saved for croutons ๐Ÿ˜ƒ)
๐ŸŒŸBring a nonstick skillet to medium heat ๐ŸŒŸLightly dunk bread in egg mixture and place on skittle for 3 minutes on each side OR๐Ÿ‘‡
๐ŸŒŸIf you have an air fryer (which gives it the real consistency ๐Ÿ‘๐Ÿ™Œ) sear in skillet for 2 minutes each side then pop in the air fryer at 370 degrees for 2 additional minutes

I love topping these with PB drizzle instead of syrup because it saves on so many carb macros! Which leave you more carbs to use on sticks!

I seriously want to make this for breakfast for like the rest of my life ๐Ÿคฃ๐Ÿ˜‹๐Ÿ™Œโค๏ธ

Macro Friendly Peanut Butter Cups

 

Made these yummy macro friendly peanut butter cups and everyone who has tried them said they’re better than Reese’s ๐Ÿ˜ฑAND they have 35 fewer calories compared to a Reese’s cup๐Ÿ™Œ๐Ÿ‘Œwhat’s the macro secret? Using peanut butter powder instead of regular peanut butter saves on carbs and fat ๐Ÿ‘Œ

I used a package of Ghirardelli dark chocolate and 6 tbsp of Betty Lous Inc Protein peanut butter powder to make the traditional looking PB cups. I melted the chocolate and placed in cupcake paper molds and then added on some peanut butter powder that was mixed with water to give the pb consistency.

For the swirly peanut butter cups I used @ghirardelli white chocolate melting wafers and 6 tbsp of @bellplantation chocolate PB2 and placed them in the molds and swirled it with a toothpick. I like the swirly ones best ๐Ÿ˜‹

 

 

 

 

 

 

 

 

 

Sun Dried Tomato & Spinach Egg White Bites

Obsesseddddd with these Sun Dried Tomato & Spinach Egg White Bites ๐Ÿคค๐Ÿคค๐ŸคคYou guys, the sun dried tomatoes from @tantillofoods add such an amazing flavor that I didn’t even add any additional salt and pepper (which I pretty much add to EVERYTHING!) .

The whole plate was only 345 kcal with 51P/25C/0F ๐Ÿ‘๐Ÿ‘Œ so I enjoyed this whole plate ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹ I love having zero/low fat breakfasts with high protein and veggies like this one on days that I have a big dinner planned, (like when I made these I was attending a special 4 course dinner with a friend that night) ๐Ÿค— but why do I like to start my days like this when I have big dinners in the evening? Because it allows me to save a big chunk of my fats and carbs for later in the day, while having the high protein and veggies in the morning which will help keep me full so that I don’t feel like I’m starving all day in order to enjoy a dinner out. This is what I like to call my macro balance โš–๏ธ keeping my breakfast and lunch light in calories but high in volume so that I’m able to enjoy my dinner without completely overdoing it on my macros and calories for the day ๐Ÿ‘Œ

 

Directions:

โ€ขPre-heat oven to 375 degrees โ€ขSautรฉ 2 large handfuls of spinach leaves or microwave for 30 seconds of until wilted

โ€ขMeasure out 515g of egg whites (about 2 cups) and pour into nonstick sprayed cupcake tins making each mold a little more than half full

โ€ขAdd in wilted spinach leaves and sun dried tomatoes (tip: add in whatever other kind of veggies you like ๐Ÿ˜‰)

โ€ขBake for 12 minutes

โ€ขPull out knowing tips will still be a little wet and let set for 10 minutes. The eggs will cook through without drying out.
